Creamy Pasta & Pumpkin

I think I broke my promise of one recipe a week! I've had a bit on over the past few weeks, so I do apologise, BUT - here is a new one for ya!


What you'll need:
Pasta of choice
Pumpkin - cut into small cubes (I used half a butternut)
Onion - chopped
Capsicum - chopped
375mL Carnation Soy Creamy Cooking Milk
1 tbsp cornflour
Mustard 
Basil
Salt & Pepper

Directions:
1) Cook pasta to your liking, drain and keep the side
2) In a pan cook your pumpkin (I microwave for a few minutes before hand to soften it up)
3) Once the pumpkin starts getting soft add onion and capsicum
4) After 2 minutes add cooking milk, cornflour and mustard to your taste
5) Simmer for about 1-2mins.
6) Toss the sauce through the pasta and add basil, salt & pepper to your taste.
7) Top with Vegan Parmesan cheese
