Snowpea & Baby Corn Stirfry

I have always found it strange how people need recipes for simple dishes like salads and stirfry, but some times you need a nudge in the right direction of which flavours to put together.

Tonight's recipe is one of those. Such simple ingredients but together work so well.



Ingredients:
- generous helping of fresh snowpeas
- 1 x tin baby corn
- 1 x pack firm tofu - cubed to desirable size.
- Noodles of choice - cooked as required
- 1/4 cup soy sauce
- 1/2 cup vege stock
- oil

How to:
1) Heat oil in a wok. Cook tofu in batches until golden. Transfer to a plate covered in paper towel to drain.
2) Using the same oil, add the snowpeas and cook for about a minute, or until bright green.
3) Add vege stock, soy sauce and corn, and cook for about 2 minutes.
4) Toss through noodles and tofu.

Serve!

For an added flavour you can add some finely chopped chili and cook your noodles in some vege stock.
